Night off!
Well if any of you are lucky enough to live near your parents or in-laws, then you all know how nice it is to not have to cook when they invite you over. Personally my in-laws are the best cooks around. They were born in China, spend a large part of their adolescence in Brazil and moved to the US for college. They owned several restaurants and now retired cook a family dinner for us every weekend. What a blessing it is to have a Night Off from then kitchen!
What did we eat? Oh right, they made Curry Chicken with Jasmine rice and broccoli. D-lish!

OK! Here is my first dinner post!
FISH! Yummy!

I got inspiration for this dinner from watching The Cake Boss! Every time he makes fish in the bakery I feel like I can taste it! So, I decided to make some Tilapia. E... I hope your family likes this one!

First things first! Rinse the filets. Then set them aside to dry on a paper towel. Season your fish with salt and pepper.

Place a large family size skillet on the stove, and set you burner to about Medium High heat to get hot.






I crushed 5 cloves of garlic with my knife to get the skin off, cut the cloves 2 or 3 times. Add Extra Virgin Olive Oil (EVOO) to the skillet about 45 seconds before the garlic. You do not want to add it to early because you don't want to burn the oil. Now add the garlic pieces to the EVOO in the skillet.


I love the smell of garlic cooking up in the kitchen! D-lish!

Let the garlic sizzle for about 30 seconds, give or take, but be careful not to burn it!



I chopped some sweet onion (1 med. size) and fresh tomatoes (2 or 3) from a local farm. I drained/rinsed about 1/4th cup of capers, whole green and black olives (about 2 handfuls of each, but I have small hands). I sliced the black olives in half length wise.

*Reserved some black olives for my kids to play with on their fingers. Gotta love it!












I then added the sweet onions to the sizzling garlic. Let the onions cook for about 1 minute then add tomatoes. Stir! After about another minute add the olives. You will will need to add some liquid to the pan also. I prefer chicken stock and some white cooking wine, or if you have some Chardonnay on hand that will work too. Stir! If it does not seem like enough liquid add more wine. Enjoy the savory smell rising into the air...D-lish!

Place fish on top of the veggies, cover and let steam for a couple of minutes!

Uncover and turn the fish, spoon the veggies on top of fish. Then add capers, cover and finish cooking. Turn heat down to about Medium.

Serve with Jasmine rice.

Why the Blog?

Ok so, I am not a professional chef, just a mom who cooks 3 meals a day and snacks in between. I want to blog because my friends (Elisa) always tell me how good my cooking is and want to know how I did it. To be honest I am a "little of this and a little of that" kind of cook. You know like your grandma who can never really tell you the exact measurements of anything that she puts into her signature dishes. Well I figured I would try to right down my recipes and post photos of our dinners. I am a very busy mother of 3 beautiful children, so some nights might go without a post but I will try to post as much as I can. I hope you and your family enjoy making dinner tonight!
